Basically we created more xG than Everton because a) we had a penalty which is worth a lot of xG, b) we scored an own goal which doesn't count towards Everton's xG and c) we were chasing the game for most of it, so Everton were happy to defend the lead and let shots come in. Add those three factors together and play with the data a bit and you can pretend you comfortably deserved the win
